There are many recipes for using starch. Starch is a white powder and, depending on the recipe, can be added dry or diluted as an ingredient. In dry form, it can, for example, be added to the dough, first mixed with flour.

However, in dishes such as jelly, starch is added in a diluted form. The fact is that starch has sticky properties (therefore it is used in the production of glue), if it is provided with suitable conditions. If you pour dry starch into jelly, then lumps form - it sticks together in hot jelly. This can lead to the fact that the jelly itself will turn out to be very liquid, like fruit drink, but with lumps.

In order not to experience disappointment, first dilute the starch correctly. Starch should be diluted in boiled, cold or warm, but not hot, water. Use a ratio of approximately 1: 2. There should be about 2 times more water. You can increase the amount of water, but remember that this will affect the total amount of water in the dish. Cover the starch with water and stir until it dissipates in the water. In water, starch does not dissolve, but diverges, mixes.

Step 4

When it is time to add starch to the hot substance, stir the starch in water again, because it will settle, and strain through a strainer. You can dilute the starch before adding it to the jelly, if you are sure that you will do it quickly. Now carefully pour the resulting mixture into boiling water in a small stream, stirring it continuously. The starch will spread evenly.
