Sterilization of cans before placing or pouring food and drinks into them is a mandatory procedure, because during sterilization all microbes and other organisms die, which helps the dishes to be stored for a long time, while maintaining their taste. Each housewife uses her own version of sterilizing cans, some trust exclusively dry processing in an oven or microwave, while others use steam. If you also chose the last option for yourself, then you probably wondered whether you need to dry the jars before putting prepared products in them. The answer is simple - it is unnecessary to dry the jars on purpose, because during sterilization, the jars are heated, and before placing the products in them, it usually takes some time, during which the jars dry on their own. However, nothing terrible will happen if the prepared foods are put in jars with water droplets.

From personal experience, I can add that the humidity of sterilized cans does not affect the duration of storage of the workpieces at all. Moreover, such blanks, where it is required to put raw products in the jar (cucumbers, tomatoes, peppers, berries, fruits, etc.), perfectly tolerate "wintering" even without preliminary sterilization of the jars themselves. It is enough just to wash the jars using alkaline agents, rinse it well with clean water, and after placing the products in them and pouring the compote or marinade, boil them in a saucepan for several minutes, the water level in which reaches half of the sterilized jar. However, you can do without boiling, you only need to pour hot marinade or compote into each jar two or three times, then close with sterilized lids, turn the jars upside down and wrap them with a blanket for a day.
